Here's a simple recipe that I've used and it works well for me:
1 cup sugar (i use normal white sugar)
1/4 cup water
1/4 cup squeezed lemon juice
small dash of sesame oil
Put everything in a pan together and bring it to the boil on the stove. Then let it simmer GENTLY for about 10 minutes, till it goes a light caramel color (don't over cook!).
Pour the hot mixture onto an oiled, heat resistant surface (like a big plate or platter) and let it cool until you can handle it (don't burn yourself!!)
Then work it into a ball and keep it in the fridge in an airtight jar.
